Spanish cuisine is a relative rarity in the Bay Area, but the charming Casa Madrid turns out authentic dishes in a Victorian-style dining room. Specialties include hot and cold tapas, those small but savory plates that go so well with a beer or a glass of wine. Make time for the slow-in-the-cooking paella, either the classic Valencia version with chicken and pork, or the seafood interpretation. Zarzuela, a heady fish stew, is another favorite. When it comes to dessert, don't even try to get the recipe for the popular "secret cake." It's still a secret.--Diablo
